History
One of the first evidences about use of beer appears
in a tablet found in Mesopotamia ( c. 7000 BC), which contains
a cuneiform inscription of a receipt for "the wine of corn".
The origin of brewery hasn't been still determined, and we don't
know if it was invented before or after bread. The legal definition
of "beer" was established in Italy by the law n.1354
of August 16th, 1962: "The denomination of beer is reserved
to the product obtained from the alcoholic fermentation with selected
stocks of Saccharomyces cerevisiae, of must prepared with roasted
barley malt and water and hops".The barley malt may be substituted
with malt of wheat or other corns in a percentage of no more than
40% (since 1989), calculated on the total weight of the used corn.
Water, corn, hops and yeast are fundamental elements for the beer brewery.
